This is one of our favorite recipes for breakfast. It is just so blasted good. I mean, who wouldn’t want something called Bacon Pancakes?
Now, I will put a caveat in this that these aren’t necessarily pancakes, more like fritters. But either way they are fantastic. I typically put some sort of creamy substance on top like Paleo Mayo, or you can put something like sour cream instead, and then add just a little bit of sriracha to spice it up. And we use green onions instead of chives.
Mark recommends using a biscuit cutter to form them into a perfect circle, but I don’t think anyone cares if it is a perfect circle when they are shoveling the goodness into their mouth.
What he has on his site is truly enough for 2 if you aren’t too hungry or plan to have something sooner than later in the morning, but it is a lot of food for 1 person to eat. So your best bet may be to make a batch to taste test and see if you and your family like it, then if you do, double it so everyone can eat up, or just have leftovers.
Either way, this is a fantastic breakfast that will be a hit, as long as you like bacon, and really, who doesn’t?
